Miso and tamari* production was the main local industry of Taketoyo. The number of the breweries peaked at around 50 eary in the 19th century, but under the WWII, the number dropped and only 8 breweries are operated at the present. The brewer in the picture is Nakasada Store, which has a small museum and shop. *According to Wikipedia, "tamari was traditionally a liquid byproduct produced during the fermentation of miso. It is mainly produced in the Chubu Region (Central Japan)."
