What actually is the purpose of the "jaggery" coating? I figured that at such hi temp the coating would just flake off after the first couple of firings. I too was interested in building my own stationary tandoor oven in the backyard using bricks, concrete mass, insulation, etc, but have been unsuccessful in finding a tandoor "clay pot" liner. Q? How is your oven holding up? Are there any cracks?
I just added a section to the tail end of this post that summarizes how it has held up over the past year.
I forgot to mention that during the rebuilt (which happened in sept) I did notice a hairline crack, but it's practically invisible and hasn't affected performance at all.
As for the Jaggery coating, I honestly don't know, as you're totally right, it smells really good for awhile when you first fire it up, but it eventually starts smoking, and you're left with sugar ash on the inside. Maybe I'd running everything too hot? For skewered cooking, the coating makes no difference. For naan, it should help it stick, but I haven't noticed a significant different yet.

Hey Eugene, I tried to built my tandoor here in Toronto using a steel drum & Terra Cotta plant pot. I am having the same issue Sticking the bread at liner. i am using charcoal instead stove. What kind of insulation you used b/w Pot & drum . I think the heat is not getting insulated at the Pot & thats why bread is not sticking into pot. Your Opinion Thanks Asim
