Saturday sees a big street market in the nearest town of Phon Thong.  It makes the town really busy and we tend to avoid going in today.  Jai has decided that there is a few things that she wants that we can only get on market day so we are braving the crowds and the incessant, very loud, drone of the local Isaan folk music, 'mor lam'.  However, after a night of torrential rain we awake to find yet more rain and our trip has to be put off - what a shame.  I fancy a currant bun mid morning but you can imagine my shock when I find that the cupboard is bare !!  So, due to the rain and my craving, shopping day becomes baking day instead.  As Jai empties the cupboard of all of the toys - sorry, utensils, - that we brought back from England with us I make myself scarce.  I used to be required to assist with reading recipes and help wighing out ingredients but no longer.  My presence only makes tension - too many cooks as they say.  I sit myself down with 'Shogun' and stay close at hand just in case I am summoned.  The little oven has done us proud so far and even looks a bit funky.
A Victoria Sponge is the first to go in the oven with a mixed black berry jam filling to go in the sandwich.  Whilst this is cooking a dozen currant buns are mixed up and swapped with the cake as soon as it is cooked.
All of the ingredients seem to be readily available but the margerine is a little different.  Not kept in the fridge at the shops - although ours is when we get it home - it is about 50/50 cocunut and palm oil and has a distinctive taste that flavours the cakes but is not unpleasant.
About an hour after work commenced I am called to check on the results and we have to half a bun between us to make sure they are OK.  Now is where I fit in as there is a sink full of washing up to be done.  Oh well, cake for the next week with our afternoon coffees.
