What to pack??????

We are struggling with what to pack though! Shopping and Bargains are a priority on the trip so we will be very likely go over our luggage limit on the way home. It is going to be COLD in China (layers needed) but perfect in Hong Kong (light clothing).
So do we only take one or two outfits and buy what clothes we need over there? Or do we wear/take old clothes that we can either throw or donate?...........but I don't want to look like a slob.
The camera, passport and credit cards are a must but can't decide on what else to take.
Maybe we should go like the amazing race contestants and just have a backpack each and buy suitcases over there?
