After the visit of the old olive oil mill in Opio, we rushed to Aix-en-Provence for our lunch at The Atelier Des Chefs. We are running behind schedule and we are not sure if we can make it on time. Peter did not waste anytime while driving safely. The Atelier Des Chefs is located in the old part of the town, where our bus can't access because the streets are too narrow. Peter drops us off as close as possible to our destination: 1st right, 2nd left here we go. The chefs at the Atelier were impatient to see us coming, we are 20 minutes behind schedule. Right away the group is split in two and the first group start to cook their own lunch while the other has time to wandering around for 45 minutes. On the menu, pièce de boeuf sauce Bordelaise and mashed potatoes. We started with the potatoes, peel, cut, and cook them. Next the shallots for the sauce, and chive for garnish. Before we know it the pans are on the stove to sauté the meat, in olive oil of course, hey! we are in provence, everything is cooked in olive oil. While the meat is cooking, the Chef shows us how to make the sauce, the mashed potatoes and how to use the mold for serving. Everyone decorates their own plate with a reduction of Balsamic Vinegar, the meat is added to the plate, covered with the sauce and don't forget the chives. Here we go ready to eat! That was fast. A quick clean up of the kitchen and the second group did exactly the same thing. For dessert we all enjoyed an brownie with Hazelnut whipped cream garnished with orange and lemon peels. The afternoon was more relaxed with shopping in the old town. We ended the day with a short drive to Avignon. Our Avignon hotel is very nice, but Oh boy! it took us 1 hour and a half to check-in. We have met the most un-efficient person at he reception, wait for the high season.....
