  We took a drive today to Lancaster County - one of the largest and oldest Amish communities in the United States.  Best known for the unique names of the towns:  Intercourse; Mount Joy; Paradise; Blue Ball; and Bird-in-Hand.  We stopped at the Lancaster Brewing Company so Greg could try the local brew, and we had their specialty appetizer, chicken wings, for a light lunch.
  We went to the Bird-in-Hand Farmers Market, which was filled with so many luscious things that we just had to bring home a few things - Apple Butter, Amish Pretzels, Sticky Buns (gooey and full of pecans!), and what I'd been wanting to taste again for years - Shoofly Pie!  "Wet-bottom Shoofly pie is kinnd of like the filling of a pecan pie, but not quite as sweet, and it's covered with a wonderful cinnamon crumble.  The main ingredients are molasses, brown sugar, and cinnamon.
  The Legend behind Shoofly Pie is this:  before home refrigeration became commonplace, most fresh  foods had to be eaten quickly before they would spoil.  Shoofly pie, however, did not spoil quickly and could be kept around the house for over a week for the family to snack on.  This made it a practical pie for people without refrigerators.  After the pie came out of the oven, it would be placed on the windowsill where a breeze could cool it off.  The sweet aroma of the pie, with molasses as a main ingredient, caused it to attrace the attention of flies.  So, much time being spent shooing those flies away - the pie's appropriate name was established!  It really is a wonderful treat - especially if it's a bit warm, with whipped cream on top (of course I use fat-free whipped cream!!)  We just bought a tiny one, enough to satisfy my long-term memories of that unique flavor, and enough for Greg to know what I'd been talking about all this time!
