We'll start this update by recapping last night with our wonderful dinner at Hidden Treasure and what a way to kick things off. The restaurant picked us up at our place at 750pm and dropped us off to waiting staff - who greeted us with cold facial towels lightly moistened with eucalyptus essence and sprigs. Heavenly.

Hidden treasures is an open air restaurant with a mix of eastern and Pacific island (think tahiti with slight Asian nods). I had the special which was a stuffed grouper with shrimp, lobster, bacon (yes bacon) and covered in what I would call crack. Ginger had the pineapple chicken that was out of this world. A half cut pineapple with marinated chicken and hints if ginger and sweet spices. Oh and our shrimp cocktail was out of this world with fresh made sauce including island spices and lime. To die for!

Soon after we were loopy with our bellies being full and we went straight for dessert. Of course I has the caye lime pie an ginger had freshly made chocolate rum cake, yes FRESH! It was unbelievable. Soon after, we were whisked away in the Hidden Treasures van, which was not a treasure but with hidden mechanical issues allowing for the engine to stall 3 times on a darkly lit road. Magical.

It is 6am BZE time and we just woke up and enjoying gentle rains and a sunrise. We are now thinking today we will hang out here, lounge in beach and read a book. Tomorrow we may venture to swim with the fishies.

Song of the day is Chris McGuire "Ambergis Caye". Google that one.
