House warming party today. No more trial runs it was now
or never could we pull off a Texas BBQ (brisket, ribs, sausages and sides) for
20 odd people? Answer - Yes??? Chris was up a 4.00am stoking the smoker,
brisket on a 5. The new BBQ digital wireless thermometer did the trick (thank
you Blackwell’s) beeping every time the temp got too low and sending Chris to
the back of the garden to put another piece of charcoal or another piece of
mesquite in the smoker. 8 hours slow cooking to bring the temperature of the
meat up and then out into the 'faux campo' for a few hours to finish off. the
weather was great, the pool got used, the Pims was refreshing, the company good
fun, the table tennis competition was thrilling - a tense final with a worthy
outcome AND last but not least the food was delicious......Chris did an amazing
job............A great day.
