First off, don't ever visit Dijon on a Tuesday. Every museum is closed Tuesdays. The only one that we heard was open that day was the mustard museum.  This of course was one of our priorities so we enquired only to find out that the mustard museum is closed indefinitely.
So we hunted down the headquarters of the makers of grey poupon just to say we were there.
The saving grace for Dijon (on Tuesdays anyway) is the shopping. They have a massive market that seems to go on for ever mainly selling produce, cheese and the like, but also clothing, trinkets, and even beds.
The old part of the city is just jammed with clothing stores selling everything from bargain bin items to prada. You could spend days browsing and spending money.  Or in our case, you could spend a day window shopping and trying on things we don't have money for just to leave the store heartbroken but with a good idea of what is the "haute couture" in french fashion.
To drown our sorrows of budget traveling, megan sniffed out what seems to be the only Irish pub in town in order to get her fix of cider.  Dijon does have a lot to offer if you manage to roll in on the right day that is.
Off for a week of exploring the "route des vins d'alsace".
