Today I woke up, and my Dad drove us to the Tabasco factory in Avery Island. On the way we had to pass through a town called Emma, Louisiana. It's funny because I love tabasco, and Emma is the closest town to the Tabasco factory.  When we first got out of the RV, I could already smell the tabasco in the air.  I started to get really excited!  The building had a brick wall. It looked a little bit like Fort Pickens, which we visited in Pensacola, FL.  When we went in the building we first watched a movie about the history of Tabasco.  I learned the process that they use to make tabasco for over 100 years.  It goes like this: the workers go outside and hand-pick the freshest, and ripest peppers. Then they quickly load all of pepper in a car, they bring them to the mashing station. Once mashed, they put the peppers in barrels with a bit of salt. Next they put a thick layer of salt on top of the barrel. The salt comes from a salt mine that is in the ground on Avery Island.  They say that it will never run out because it goes down farther than Mount Everest is high!!!! They let the barrels age for three years, and then they take the peppers out of the barrel, and stir the peppers for 28 more days. Finally, it is ready to be bottled, and sold to customers.  It takes a long time to make this sauce, but it’s worth it!  We then went to the gift shop, and I got a wrist band, Buffalo tabasco, Mini Tabasco bottles, and tabasco Cheese-its. We also got to sample, tabasco ice cream, tabasco soda, tabasco mustard, and lots of other sauces.  My Dad also got a gallon jug of Tabasco.  Then we went in the RV and ate lunch.  I had an awesome day at the Tabasco factory.  We then drove to Texas.  When we got to Texas we got out of the RV, and took a picture by a big 'lone star’ sign.  When we got to our campsite we took a shower, ate dinner, and watched a movie. Then I went to bed.

Wow! Emma, congratulations for finding a town named Emma. I shouldn't tell you not to eat so much Tabasco anymore. You and Tabasco are made for each other. When you come home, we will make a cake and put a couple drops of Tabasco in it. Emma, now we just need to find a town named after Katelyn. Love you guys!

This is awesome! Tabasco.... I put the Sh*% on everything! I also remember a Scooby Doo Movie from Avery Island. Now I need to go there too.
