Hello everyone! Lulea has bloomed in the last few days, flowerpots are suddenly overflowing with pansies and begonias, and the trees are dripping with buds. Blue skies, blue water, all around. To celebrate the summer solstice, I baked a Swedish cake with strawberries and cream.  Fresh strawberries here are much smaller than in the US, they are pure ruby red, have stems attached, and look like they could explode with sweetness at any minute. Too bad they were so expensive, so I had to settle on EuroShopper frozen strawberries from Belgium. Not bad, in fact...good.  I also had to buy the round slices of pound cake pre-made, because it didn't make sense to buy big bags of flour and sugar this late in our stay. And for the cream, I bought Coolwhip....Not! I bought 2 little cartons of cream and whisked my way into creamy peaks of happiness phased with delusion...and stage one of carpal tunnel syndrome. But then I had to add sugar, so I crushed some sugar cubes (which seemed very ridiculous), that came stocked in our kitchen pantry. After mashing the berries, I layered the ingredients according to my online recipe, and then spackled the remaining cream over the cake. After dinner, we all partook in its deliciousness. Wish you were there.
 
Last night we went clubbing again as a farewell tribute to the French students who have been working with Kyle and everyone else at the University. We dressed in our finest Swedish-inspired outfits (Me = leggings, shorts, top, and heels) toasted to memories from Sweden with honey wine and tequila shots. And once again we bounced backsides with the locals. I can't end this paragraph without mentioning the apparent Attention-Deficit-Disorder of Swedish DJ's who seem to live by the motto, "Why play an entire song, when you could just play a 30 second clip?" I'm just saying...maybe you should try dancing to "Too Legit to Quit" as it gets awkwardly blended into Shakira's "Underneath Your Clothes." Because before you know it, you're exchanging back sweat to Michael Jackson's "Thriller," and you're wondering--where did the night go?
 
Tomorrow we are hoping to join the locals at a park for a Midsummer celebration. There should be a May Pole, that is all we could gather from the poster advertising the event. We're also planning a trip to Jokkmokk for the weekend. It's a town on the arctic circle that has good hiking and plenty of sunshine.

I must see the Sweedish club wear! Your description of the DJ's music sensibility cracked me up and appalled Josh. :)
