If the last few days are any indication for the rest of the trip, its going to be a good time.
Everyday I wake up at 5:30, make sure breakfast is being prepared. Its basic fare; porridge, bread and spreads, coffee and tea, fruit if it is available. After breakfast we clean up and load up the trucks.

After breakfast we hit the road, find a local market, and buy our produce for the next day or two, Because neither Miles, nor our local guides or myself are particularly fond of day old bread and peanut butter we usually sit down for a proper feed of falafel and fool (fava beans puree) with some hot pita out of the oven and lots of veggies. Hitting the markets is the highlight of my day. Lately they have been small stores selling a small variety of local produce; eggplant, tomato, carrots, onions, cabbage, cauliflower, potatoes, bananas, etc.

Once we have all the food we need for the day we make our way to camp. We set up camp and start cooking. First off we make a soup which usually involves adding water and broth to last nights leftovers. This is also a very enjoyable part of the day. Everyone is in a good mood in the absence of guests. We get all of our prep done early then we chill out while we wait for the guests to arrive. Dinner is also basic given the limitations we have to work with. We serve a starch usually rice or pasta. Come 5 O'Clock we serve dinner, followed by hot drinks. The guests help us clean up, and we're done for the day by 7 O'Clock. I enjoy a lot of free time daily, and usually retire to my tent at 9.
