Today everyone around us is at home. We too are reading, relaxing and this is the day for laundry, cooking and tidying up loose ends. For me that means organizing the fridge and the kitchen. I also strolled outside and found another lion. They are everywhere. 

Shopping is almost a daily thing here if you are staying in a villa, so meals are planned and everything is used. When shops are closed you clean out! 

Today I deboned, Yep I deboned two chickens for a recipe Tony found and would like to try on the BBQ. They are being marinated overnight to have tomorrow, with lemons, rosemary, olive oil, garlic, salt and pepper. They will be rolled and filled with more lemon and skewered with rosemary and roasted "whole". With all of those bones I made a huge pot of stock to be used at a later date for risotto or soup. The kitchen smelled wonderful. For dinner I made a pot of Sunday Sauce, divided it, some for Ragu to have later and the other was for manicotti which we had tonight. My manicotti was a crepe rather than a pasta shell, another recipe from here. Served after being baked in the oven and topped with arugula, it was good! My stuffing was made from ground beef, bread crumbs, cheese, leftover lamb, lots of herbs. Making crepes was easy, Tony was surprised at how well they served the pasta role.

I have mentioned a lot of lemons and garlic with the food. Lemons are everywhere right now and they are juicy and full of flavour. When I say everywhere, I mean everywhere. They fall down around you from above while you are driving or walking. A constant supply. The garlic are huge, hard and fresh, braided and ready to pull off and use. Like other parts of Europe, you use the flavours that are freshest, they taste better when you have waited so long to have them.

My foot/ ankle is just fine, I was lucky and am now paying close attention to the ground. What aches are left came with me on the plane. We are certainly getting our exercise with walking, especially our legs on the incline.

The wine here is lovely, crisp whites and full bodied reds. We find what we need at the local grocery store along with some very fine Port which we have enjoyed with cheese, or chocolate or both. It will be interesting to see what is in the specialty stores or at the wineries etc. 

Internet a little in and out today. Considering where we are I am amazed how good it has been. I feel very fortunate to hear from everyone via email, see photos of, and FaceTime with my grandchildren! We have not lost any power yet either, which we were told may happen. Touch wood, or maybe not. It would return soon enough, we would just have to sit back and read or sleep.

Tomorrow morning we will pick up Mike and Debbie Provan at the airport. We look forward to our time with them and sharing our home. They will carry on to other cities and experience Portugal from the North in Porto to the south in the Algarve region. Apparently Mike has planned to rent a car when they leave here; wait until he sees the road to Penedo....

We will get up early, Internet a little in and out today, thinking of you all and my Mom. It was her birthday, she would have been eighty-three.
