Saturday, September 17th

After finishing up with the Great Vermont Corn Maze we headed to Cabot, VT to check out the Cabot cheese factory. We showed up just as a tour bus from Pennsylvania showed up.  So we ended up joining there group and going on the tour with them.  There were 25 of them so they added us and split us up in to two groups.

They weren't making any of their sour cream, yogurts, or cottage cheese today, but we did get to see them making some cheese.  It was pretty cool.  We also got to see one of the labs where they test samples from the milk that comes in from the different farms around the area for the cheese.  It was all quite interesting and informative.  Jared and I figure that I could do the milk testing job so we can add working in a creamery to my list of jobs.  I love these factory tours. Haha.  After finishing up with the tour we were able to taste all the cheeses they had on sale.  I loved the vintage cheddar cheese.  It is super sharp and delicious.  They don’t distribute that to far though since they don’t make too much of it.  Apparently the longer the cheese sits before being packaged for sale determines how sharp the cheese is.  Since it has to sit for so long they don’t make too much of it.  It was delicious though so we bought a block of it along with a block of pepper jack that Jared really liked.  After making our purchases we headed out.
