Honey usually comes in liquid form.

But some of the most amazing honey I've bought is in rock form. Not in a honeycomb, but preserved and crystalised in a rock.

Here, there are stories about people putting glucose in honey, or cutting it with lard to make it whiter and also to make it set. Do it is hard to know for sure what is in the honey you buy in the market or shops or from roaming sellers.

Not so with rock honey. It is wild honey that over the years has crystalised. There are a few sellers around, who have these large boulders of the rock honey for sale. It is so hard they have to chip away at it with a knife to get some dust and flakes.

The taste of wild rock honey is out of this world. Or fully in it. As well as being sweet, it has strong flower flavours, a little like rose water or orange water, but speaking of wildflowers in the mountains.

The rocks, which seem to be several kilos in weight, are often covered with lichen and moss, and the interior is pale grapefruit through to darker orange. The price is 40 yuan for 50grams. Or at least the starting price is. Yesterday we got a small lump for 10yuan - less than $1.50. Wrapped in plastic, we took it home like a gold nugget, stopping to bite into the hard surface to break off a sliver.
