Today is Michael’s birthday. What better way to begin the day than with an invigorating workout at the fitness center! The fitness center was state of the art, spacious, and comfortable. It had all of the equipment we enjoy using, in addition to several fitness classes and personal trainers. After an hour-long workout, we had stimulated our appetites and needed to refuel. So we quickly showered and headed off to enjoy the brunch extravaganza.
The main dining room was decked out with a colorful display of fruits, vegetables, breads, and pastas. In addition, there were carving stations, omelette stations, waffles, sushi, salads, desserts, and a chocolate fountain. The food was displayed artistically. All of the decorations were carved from fruits and veggies, except the two lovely ice sculptures. Beautiful! You would think we would need to go back to the gym to work off all of that food. But instead, we went back out to the poolside for more sunning and a dip in the Jacuzzi and swimming pool ... along with about 1,000 of our closest friends. Okay, maybe there weren’t 1,000 people on the pool deck, but the area was a perfect spot for people-watching. Unfortunately, we spent so much time out there watching all of the people that we got a little burned. Michael and I both were so red we looked like two little lobsters by the time we made it back to the cabin to freshen up for dinner.
Being that this was a special night, I arranged for a special dinner. The Constellation has two specialty dining restaurants -- Tuscan Grill (Italian) and Ocean Liners (French). You know how much of a francophone Michael is, so we had to go with the French place. I’m glad we did because it was a wonderful experience. Michael ordered cognac-flambeed lobster tail and I had the grilled Mediterranean sea bass. Both were delicious. We followed up our entrees with pear/pineapple sorbet for Michael and the amazing balsamic strawberry crepe with vanilla ice cream for me. Yummy, yummy, yummy! The entire dining experience was fantastic -- from the atmosphere to the food to the service. What a way to end the day.
