Rafting on the Colorado River

Today was a more layed back and relaxing one than some of our other hectic days. Kristi and the kids slept in while I went off roading in the jeep. I found a really cool cave that went straight through a mountain. I made it about 100 yards in and then convinced myself that I heard a rattle snake and booked ass outta there. We had a rafting trip for the afternoon with a local outfitter. It was a blast. Not too extreme, but the guide did say that "an older gentleman who was overweight" died on this trip 3 weeks ago. He later said that the older gentleman was about 40! Well, that little comment cost the nice river guide 50% of the tip that I was planning. lol The trip included lunch. The guides pulled us into a small alcove and promptly set up a make shift kitchen. All sorts of fresh ingedients were being sliced and diced. Before we knew it they were serving this fantastic medley of beans, sour cream, gucamole, olives, chesse, onions etc served in a rolled up tortilla. It looked like an ice cream cone stuffed withe mexican food. They called it a mexi-cone. After having a great lunch on the baks f the Colorado River, we continued our afternoon paddle through some mild rapids. Fantastic scenery, met some good peole and had a really good day.
Here is the mexi cone recipe for anyone feeling hungry.
Mexican Salad
(To serve 6)
1 can kidney beans
1/2 can black olives sliced
1/2 teaspoon garlic
1 1/2 teaspoon lemon juice
1 lb grated cheddar cheese
10 oz sour cream
10 oz salsa
2 diced tomatoes
1 diced avocado
some diced green onion
Mix all together.
Add broken corn tortilla chips just before serving (or they go all soggy).
Serve in flour tortilla cones.

Sorry to say that I did not get any pics of the mexi cone. We are just getting settled here in Lake Tahoe. It is a little crazy here for the 4th. A little too crazy. Just witnessed a nasty drunk driving accident involving 5 cars
