The first Indonesian I learned - "babi guling" (roasted, suckling pig). One of my favorite dishes here. Babi guling includes both crispy skin and tender meat. On the side are stuffed pigs intestines, vegetables and more spices. It looks better than it sounds.
Actually, I think there's only one main Balinese dish - chilis with chili paste. It varies when they add chicken, pork, fish, vegetables or rice. Every dish is so hot. It took me a month to finish my first babi guling. My second favorite dish is steamed rice - to soak up the spices.
I tried lots of the local cuisine (street food). Usually by not asking what the dish was. And most of it was delicious. Even just a simple "bulbur" for breakfast. It's a rice porridge with satay sauce topped with shreads of roasted chicken and scallions. Sometimes they add a few roasted peanuts or a sweet plum sauce. Simple, but tasty.
