We had decided yesterday that Manuel and I would host dinner and make carnitas. This worked out for us, as the carnitas would take a minimum of 6 hours to cook so with no sightseeing plans, it made it easier for Manuel to plan out his cooking schedule.
We had a good breakfast, then the guys except for Manuel and Carter went fishing. The girls and Carter went down to the lake shore to spend time in the sun and water and to relax. Alexis and I stayed at the campsite to help Manuel and to prepare things for dinner. Alexis wasn't feeling well. She slept in, then helped me and Manuel.
In the early afternoon, we were pretty much on top of things for dinner, so I decided to go meet up with the girls at the lakeshore. Alexis wasn't up to going. I joined the girls for about 2 hours, then headed back. I had left beans cooking and still had a few things to do for dinner tonight.
Everyone got back to the campsite, the carnitas, sopa, and beans were ready. We had a good dinner. While eating dinner, Alexis is stepping down from the trailer and spots something dark across the street. It is a female moose! the moose is really close but across the street. She is foraging but stays across the street from us and at times just stands there looking our way. She then lies down and acts like she doesn't have anything to worry about. Of course we are all excited and taking tons of pictures, but still having to be careful as the moose could get aggressive with us. This goes on for about a half hour, then she goes into the forest. That was exciting.
Dinner is done, we sit around the campfire. There are s'mores being made. By 11pm most of us are headed for bed.
Oh yes, and after the carnitas were done, Manuel made menudo for the next morning.
