We recently purchased our plane tickets. Although we are not 100% sure on the exact itinerary, below is a rough draft of our plans:

Leave NYC
Hong Kong - 3 days
Japan (Tokyo, Kyoto, Osaka) - 1 week
China (Shanghai, Xian, Beijing) - 1.5 weeks
Vietnam - 2 weeks
Cambodia - 1 week
Laos - 1 week
Thailand - 1.5 weeks
Malaysia/Singapore - 1 week
Australia (Darwin, Ayers Rock, Cairns/GBR, Sydney, Melbourne) - 2.5 weeks
New Zealand (North and South Island) - 2 weeks
San Fran - 3 days

This will definitely be a whirlwind trip, but we are very excited. I will update as we continue to plan leading up to March 8th. Next step: Trip to the travel clinic on 10/15.
