What’s Cooking with Happy
Rick Card owner of Joe’s Grill and Cantina in Ft. Smith, Arkansas is an ace at cooking up the best Tex-Mex in the River Valley. You may be new to the Joe’s name but chances are you’ve savored the flavor of his cooking before. Joe’s Grill, formerly named Cuco’s and located in the old Phoenix Village Mall has been refining Tex-Mex cuisine since 1986. Since Card’s restaurant debut in the 80’s with the Cuco’s franchise, he has relocated, dropped the Cuco’s name and now just calls the place Joe’s Grill and Cantina.
The restaurant’s convenient location across from Harp’s on 74th Street, between Phoenix and Rogers is easy to get in and out of if you are visiting someone at Mercy, shopping at Sam’s Club or Lowe’s. Joe’s is perfect for a midday lunch or afternoon dinner if your back to school shopping and have the whole brood with you.
Joe’s friendly atmosphere is no doubt an extension of Card’s congenial and laid back personality. He relays that amiable generosity with specials like 'Taco Tuesday’, which features $1.00 Tacos, and every Monday he pick’s a winner from the business card bowl, for a free lunch.
Although the restaurant lends a comfortable family atmosphere, you can also settle into the man cave sports bar in the rear, with football, golf and baseball on the flat screens and some great feel good music to set the mood. You can catch all of the big games and cheer on your favorite team with the perfect game day food!
On a budget? You can always find a good deal at Joe’s. They offer 5 menu items for $5.00 each, such as enchiladas, poquito nachos, beef burritos, crispy tacos and pollo del rey, which is a boneless chicken breast dish served on rice.
Add a little spice to your dining experience with their Mexican Pizza. This 12" flour tortilla layered with cheese and ranchero sauce, is topped with ground beef, green onions, tomatoes and jalapeños. They’re certainly not shy with the toppings and this spirited Mexican pie is as dapper as it is delicious.
Holding on to that bikini body even though it’s too toasty to swim? Have no fear; Joe’s has guilt free menu items to keep the savory in svelte! One of my favorite items at Joe’s is their Spinach Avocado Wraps. This spinach tortilla, with fajita chicken, cheeses, guacamole, lettuce and diced tomatoes, is a healthy entrée that will leave you satisfied without the remorse of over indulging.
