What I did
Sorting through the slippery stems my mind wanders. Hey, when life gives ya post prime herbs, make pesto! Salvage what ya can!
Here's what I did...and it worked!
Saute a handful of peanuts. Pine nuts would be awesome but in this economy, who's naming their nuts?
Hope ya have a food processor or blender, cuz this is where it's going.
Olive oil - to taste
Salt - if ya like
Black pepper - oh yeah!
Cayenne - even better
Lemon juice - best "go to" taste enhancer, splurge if ya must!
Garlic - yum! Sizzling in the pan! (did you know there are folks that don't like garlic!? Don't trust them...)
Then, as time and wine on hand permits, de-stem the cilantro, add all ingredients (heck even some of the wine! Why not?!) and pulse in the processor or blender.
May sound odd, but this is a yummy, cheap pesto to have on hand. Impress your friends!
