We acutally only stopped and walked around in Katoomba for an afternoon but its an adorable little town that used to be a coal mining mecca back in the late 1800s. It's picturesque but small but the surrounding Blue Mountains has a ton of amazing things to offer.
We stayed at Lilianfels in the Blue Mountains for one night and it was everything I could have hoped for and more. This five start hotel is a historic mansion nestled up in the mountains in the midst of a well manicured botanical garden. Hiking trails are only a short walk and we took the scenic railway which is the steepest railway incline in the world. We also took the cable car which had a clear bottom to look down. The Blue Mountains National Park has awesome hiking trails, is full of green lush natural beauty and everywhere you look you can see the Three Sisters towering over the valley. The Three sisters are famous rock formations created by erosion. After a full day of hiking the mountains we had an unforgettable meal at Lilianfels award winning restaurant Darleys which is very romantic with a fire place and views overlooking the mountains.
The following morning we got up at 6 am for a private "breakfast with the kangaroos" tour arranged by the hotel. Our guide picked us up in a jeep and drove us out in the wilderness where we saw beauty and lots of kangaroos. It was so different seeing them in their natural habitat than the poor kangaroos we saw laying dozing off at the zoo grounds. These guys had strong big leg muscles, shiny coats and jumped around as I always imagined them doing. I will never forget when I saw my first kangaroo sitting in the wet grass as a light low fog swept over it and the sun was coming up.
