Brian's decided to sign up for a 3 day diving package, so I've gone off to do some cooking. I love Thai food and actually cook it quite frequently (especially after I found the Thai supermarket on Dalry Road). It seems quite simple to cook, but I just wanted another little insight.

When I arrived, I found that I was the only student! A plus for arriving a bit before the busy season I guess. I could choose from 10 typical Thai dishes and make 3 of them. I chose Pad Thai since I was always curious as to whether or not I was doing the noodles correctly.  Also, my 2 new favourites: cashew chicken and Tom Yam soup. It was great to have a super laid-back atmosphere with lots of time for talking in between making the different dishes. I was able to ask about and sample some of the many fruits and veg that we don't get in non-tropical climates. However, since I was the only student, it also meant that I had to eat everything that was made!

The other night when we went out to eat, we had a discussion over spice.  We both like spice and can take quite a lot of heat in our food. So we went to a well recognized Thai seafood restaurant and ordered some food. The waiter wanted to give us red peppers on our fish rather
than the red chillies that we'd ordered. The whole discussion of whether or not we can have 'Thai spicy' is the issue. As we haven't had food that we're sure IS actually Thai spicy yet, we didn't know what to say! So we asked for a little less than Thai spicy. I still don't think they gave us anything near Thai spicy as it looked like peppers in the dish and not chillies. So now, in my private little cooking class was my chance to try! When making the tom yam soup we counted out 25 little Thai chillies to put in my single serving.  Pounding them in the mortar and pestle was very satisfying, but I needed to wash my hands afterwards in case I had any residue left.
Added to the soup it was very spicy indeed – even to my Thai teacher! But after the addition of a little chilli paste (which I need to find in the shops later) and some condensed milk it was
wonderful! Hot, yes, but that's what we like! Now next time we go out, I can say with confidence that I want it spicy!

After the cooking segment (since we were done super early) the family bought me an ice cream from the guy who was pedalling along the street. A wonderful coconut ice cream with sweet red rice on the bottom and something sprinkled on top. We also took a wander around the garden where a lot of what we had been talking about was growing. Of course there were the ones I knew (lemon grass, Thai basil), coconut, banana), but I also got to see galanga, pineapple, tamarind, papaya, mango and many more edible goodies. Things also grow very very fast here. I was looking trees with half a dozen papayas on it that were only a few months old?!?!

Now with my carry-out bags of leftover food I need to see if Brian can take the heat...

What a marvelous idea to take a cooking class!!
You should make it a theme in every country you visit!
